淮杞燉乳鴿
「燉乳鴿」意即把羽毛都還沒長齊，還不知青天是何滋味的小鴿子，又送回幽冥世界，如果用人做類比，就是把仍在吸奶還不會走的嬰兒燉來吃(聽說很補)，人對又小又嫩的生物有難以割捨的偏好，寧願停留在生理層面滿足口腹之慾，而不願昇到精神層面去關懷生命的權利與尊嚴。我只有一條命，我想好好的活到老，這點我很清楚；至於其他生命是不是也僅有一條命，是不是也想活到老，這點我就不在乎了。

Yam and Medlar Braised Squab

Roast squab refers to send those newly born squab without experiencing this world yet back to the death world. If analogically describing this dish with an example of human being, it is like to take infant who doesn’t learn to walk yet to cook (It is said that infant is an ingredient of good nutrition.) Human beings have strong preference toward those young and tender living creatures. We rather stay on the physical level of satisfying our appetite than enlighten ourselves to the spiritual level of caring rights and dignity of other lives. I only have one life and I want to live it full till the end. I know that clearly; as to whether other living creatures also have on life and they want to live full till the end as well, I don’t really bother.
